Pandesal Bread

Tasty homemade Filipino pandesal rolls!

  1.  In a large bowl, combine 1 cup of lukewarm milk, 1 egg, 1/4 cup sugar, and 2 teaspoons of instant yeast. Mix well until fully incorporated.

2.  In a separate big bowl, mix together 3 cups flour and 1 teaspoon salt.

3.  Add flour mixture to the liquid mixture to create a dough.

4.  Add 2 tablespoons softened butter and continue mixing until fully absorbed.

5.  Transfer dough to a lightly floured counter. Knead until smooth and elastic.  The dough is ready when it stretches without tearing.  Shape into a ball and place in a lightly oiled bowl.

6.  Shape into a ball and place in a lightly oiled bowl.  Cover and let rise for 1 hour or until doubled in size.

7.  Punch down the dough and transfer to a floured counter.  Divide into two equal parts.  Roll each piece into two logs.  Cut each log to 5-6 equal pieces.

8.  Form each portion into a smooth, round ball, then roll it in breadcrumbs until every side is evenly and completely coated.

9.  Place the coated pieces on a baking sheet, spacing them at least 1 inch apart. Cover lightly and allow them to rise in a warm area for a second proof, until doubled in size, about 30 minutes.

10.  Preheat the oven to 350°F. Bake the Pandesal for about 15 minutes, or until the sides are lightly browned.

11.  Remove from the oven and serve hot. You may add butter, if desired. Enjoy it best with a cup of coffee.
