- 1. Add 1/2 cup brown sugar to the 2 1/2 cups of diced strawberries, soak for 5-10 min. Smash or blend the 2 cups of strawberries using a food processor. Reserve the rest of the diced strawberries for Step 5.
2. Preheat the oven to 350 degrees F. Spray a 9x5-inch loaf pan with nonstick spray.
3. Sift 2 cups flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/2 tsp nutmeg (optional), and 1/2 tsp salt together into a bowl.
4. In a separate bowl, beat 1/4 cup granulated sugar and 1/2 cup unsalted softened butter together until lighter in color.
5. Mix in 3/4 cup sour cream, 2 eggs, and 1 tsp vanilla. Add 3 mashed large bananas and mix until combined. Gradually mix in dry ingredients. Fold in the smashed or blended strawberries and 1/2 cup diced strawberries and 1 1/2 cup walnuts.
6. Pour the mixture into the prepared loaf pan.
7. Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 45 to 60 minutes.
8. Slice, serve and enjoy!
Notes:
- This recipe yields 10 slices of bread.
- You can replace sour cream with 3 tablespoons of milk if sour cream is not available.
